The past decade of my life was spent in the Medieval town of Puy L’Évêque in the South-West of France and the place of origin of the Malbec varietal. My insatiable curiosity and love of nature propelled me to fully understand the meaning of terroir. Embedding myself into the French community meant fully mastering the language so that I could tap into the age-old culinary savoir-faire, fully embracing the French passion for fresh, regional products. The more I integrated myself, the more heavily-guarded secrets were shared - secrets surrounding foraging, the deeply-ingrained wine tradition, saving summer in a jar and training my dog to find truffles was just the beginning of a journey that has allowed me to bring this produce-driven French sensibility to New American cuisine.
